Lentils are high protein foods along with broccoli and peas. Also lentils ar rich in fibre , iron and folate as well. Hence,this well balanced and nutritious soup packs well for lunch/dinner as a meal.
Ingredients :
- 10 to 12 Brocolli florets, cut and washed (optional, as per market availability)
- ½ cup lentils (brown or green ) washed and rinsed
- ¼ cup Peas (washed)
- 1 carrot , peeled and chopped
- 1 medium white onion, chopped
- 1 medium tomato, chopped
- Freshly grounded black pepper ( a pinch or 2 )
- 1 tbsp olive oil
- Curry leave /thyme (for flavor/optional)
- Salt , to taste
Method of preparation:
- Pressure cook the lentils for 4 whistle in the cooker.
- Meanwhile, add olive oil to the pan and stir fry onions, tomatoes and carrots until halfly cooked.
- Add curry leaves, thyme to the above vegetable mixture.
- For the creamy consistency , blend half the lentils in a blender and pour the other half in the vegetable mixture.
- Then pour the blended lentils in the vegetable mixture and add water as per the required consistency.
- Simmer and cook the entire contents for 10 mins, also for the flavor to blend in.
- Add pepper and salt to taste.
- Serve hot and enjoy the creamy lentil soup.
Note:
For clear soup , mash and strain the lentils and the vegetable broth and mix both the mixture.
